Just a super quick post tonight. I still had some wild blueberries that hadn't been used up. Since I didn't want these babies to go to waste, I cooked up a batch of Berry Oat Squares from La Dolce Vegan.
These squares are relatively simple with lots of oats. The filling is raspberry jam mixed with blueberries. The bottom crust is cooked first, then you layer the berries and the crumb topping. Both the top and bottom are crunchy, you gotta love it! If you have La Dolce Vegan, I highly recommend this recipe. I'll be making this again at some point, I am sure.

Wow, those look really good. I've seen that recipe, but I don't have jam so have never made it. I'll have to look for some vegan jam next time I'm at the store.

Jess - I actually like these more than Dreena's coconut rasberry bars. Those are good, but in a different way. They are very delicate with the coconut crust. These are more substantial with the oatmeal and I dig the fresh blueberries.
Teddy - I used fresh wild blueberries and raspberry Polaner all fruit. You might be able to switch to completely fresh fruit filling though.

Heather - I may have to pop one in the freezer for you. There are only a few left now. On Saturday, it sounds as though I am heading to the hot air balloon festival in RI. Maybe we can get together in the city on Sunday though.
