Tonight I had another avocado and veggie sandwich on toast with the green garlic dressing. The dressing mellowed out over night and now I like it even more. The next question was what to do with the remaining three avocados.

I was thinking that I would make my first batch of guacamole which required a recipe of some kind. For about twenty minutes, I flipped through different cookbooks. The last book I grabbed was Passionate Vegetarian. Early in the book was Mockamole!

What is that? Well---it is guacamole with a portion of the avocado and frozen peas pulsed in the food processor. Sounds weird, but the peas blend in well and add hint of sweetness. Less avocado also lowers the fat content. I think I prefer it to regular guac. Those are blue corn chips in the photo.

hmm I've never heard of mockamole.
I just make guac by mashing up the flesh of an avocado, adding some tomatoes and some cilantro. a lot of the time i just mix in some store bought salsa. tastey and simple :)

Teddy-- this has tomato, onion, cilantro, lime juice, cilantro, and avocado and of course peas. I might bring some extra salsa to work with my mockamole for lunch.

Kleo--You might want to give this a try, especially with some salsa. You might be surprised. I'm definitely diggin this more than regular guac. I can email the recipe if you want it.

very cool. I've never heard of adding peas, but it makes so much sense!

Great idea to use peas with the avocado to lower the fat content. I definitely have to try it.

Hmmm. Interesting idea. One of my favorite guacs include silken tofu for a protein boost. But I just might try this... Thanks, Jody, for dropping by my blog. I've been absent a lot lately, but vow to do better!
